Do you keep them totally dry or does avoiding excess watering mean that they get some water?

I guess the latter....

In Miami I just leave them in their pots through the Miami winter if you can call it that.  Pretty much most to all of them re-emerge in the spring.  They are in a shadehouse with everything else.  I avoid excess watering, That's about it.
